  • 2 medium sweet onions, thinly sliced
  • 4 garlic cloves, minced
  • 1 cup red wine
  • 2 cups low-sodium beef broth
  • 4 sprigs fresh thyme
  • 2 bay leaves

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season beef short ribs with salt and pepper.
  3. In a large Dutch oven, heat oil over medium-high heat. Sear each side of the ribs until browned (about 4-5 minutes per side). Remove from pot.
  4. Add onions and garlic; sauté until translucent (3-4 minutes). Deglaze with red wine.
  5. Return ribs to the pot along with beef broth, thyme, and bay leaves. Bring to a simmer.
  6. Cover tightly and transfer to the oven. Braise for about 3 hours or until fork-tender.
