  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 cup bell peppers (diced)
  • 1 small yellow onion (diced)
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Dice chicken breasts into bite-sized pieces and chop bell peppers and onion.
  2. Heat olive oil in a skillet over medium heat. Add chicken; season with salt, pepper, cumin, and paprika. Cook until golden brown (6–8 minutes).
  3. Add diced onions and bell peppers; sauté until softened (about 3 minutes).
  4. Sprinkle shredded cheese over the mixture; cover for about 1 minute until melted.
  5. Place one tortilla on a clean surface; fill half with the chicken mixture and fold.
  6. Cook each folded quesadilla in the skillet over medium heat until golden brown on both sides (3–4 minutes per side).
  7. Serve hot with salsa or guacamole.
