  • 4 slices thick-cut bacon
  • 2 medium Yukon Gold potatoes, cubed (about 2 cups)
  • 1 cup bell peppers, diced (mixed colors)
  • 1 medium yellow onion, diced
  • 1 cup sharp cheddar cheese, shredded
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Wash and chop vegetables; dice onions and bell peppers finely; cube potatoes.
  2. In a large skillet over medium heat, add olive oil and cook potatoes until golden brown and tender (15-20 minutes), stirring occasionally.
  3. Move potatoes to one side of the skillet; add chopped bacon to the other side until crispy. Sauté onions and bell peppers until soft.
  4. In a bowl, whisk together eggs with spices until frothy; pour evenly over the cooked ingredients in the skillet.
  5. Once edges of eggs set (after about 3-4 minutes), sprinkle cheese on top; cover until melted (about 5 minutes).
