  • 1 cup Arborio rice
  • 4 cups low-sodium chicken or vegetable broth
  • 1 medium onion, finely chopped
  • 23 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup of your favorite vegetables (peas, mushrooms, or asparagus)

Instructions

  1. Heat the broth in a separate pot over low heat to keep warm.
  2. In a heavy-bottomed pan, heat olive oil over medium heat and sauté the onions until translucent.
  3. Add minced garlic and Arborio rice, stirring for about 2 minutes until lightly toasted.
  4. Gradually ladle in warm broth one scoop at a time, stirring frequently until absorbed before adding more.
  5. When halfway through adding broth (about 10 minutes), stir in your choice of vegetables.
  6. Once all liquid is absorbed and rice is al dente, mix in Parmesan cheese and butter for extra creaminess.
