  • 1 packet taco seasoning
  • 1 (15 oz) can black beans, rinsed and drained
  • 2 cups tortilla chips, crushed
  • 2 cups shredded sharp cheddar cheese
  • 1 cup sour cream (for topping)
  • 4 green onions, sliced (for garnish)
  • 1 cup diced bell peppers (any color)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked (7-10 minutes). Drain any excess fat.
  3. Stir in taco seasoning and water according to package directions; simmer for about 5 minutes.
  4. In a greased baking dish, layer half of the crushed tortilla chips, followed by half of the seasoned beef mixture, half of the black beans, and half of the diced bell peppers. Repeat the layering process.
  5. Top with shredded cheddar cheese and bake for 20-25 minutes until golden brown and bubbly.
  6. Let cool for 5 minutes before serving. Add dollops of sour cream and sprinkle with green onions.
