  • 1 lb lean ground beef
  • 1 medium sweet onion, diced
  • 1 cup bell peppers, diced (mixed colors)
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with herbs
  • 2 cups elbow macaroni
  • 2 cups low-sodium beef broth
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions

  1. Heat a large pot over medium heat. Add a splash of oil and sauté the diced onions and garlic for about 3-5 minutes until fragrant.
  2. Stir in the ground beef, breaking it apart. Cook until browned evenly.
  3. Add the diced bell peppers; cook until softened.
  4. Pour in the diced tomatoes, beef broth, smoked paprika, oregano, salt, and pepper. Stir well and let it simmer for about 10 minutes.
  5. Add elbow macaroni to the pot and stir to coat with sauce. Cover and cook for an additional 10-12 minutes until the pasta is tender.
  6. Adjust seasoning if needed, then serve hot garnished with fresh parsley.
