  • 1 medium yellow onion (chopped)
  • 4 garlic cloves (minced)
  • 1/4 cup extra virgin olive oil
  • 4 cups low-sodium vegetable or chicken broth
  • 1/4 cup fresh basil leaves
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange halved tomatoes cut-side up on the sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until caramelized.
  3. In a large pot over medium heat, sauté chopped onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  4. Combine roasted tomatoes (with juices), sautéed onions, garlic, and fresh basil in the pot. Pour in the broth and bring to a simmer for 10-15 minutes.
  5. Use an immersion blender or regular blender to puree until smooth. Adjust seasoning if needed.
  6. Serve warm with fresh basil or cream drizzled on top.
