  • 2 cups fresh pumpkin, peeled and cubed
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup coconut milk
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté the onion and garlic until golden brown.
  2. Add pumpkin cubes and vegetable broth; bring to a boil. Reduce heat and simmer for about 20 minutes until pumpkin is tender.
