  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup diced bell peppers (mix of red and green)
  • 1 cup finely ground cornmeal
  • 2 cups shredded cheddar cheese
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 cup water
  • Sour cream (optional for serving)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef. Add diced bell peppers and cook until softened (3-4 minutes). Stir in black beans and spices.
  3. In a bowl, mix cornmeal with water until smooth. Pour over the sautéed filling evenly.
  4. Sprinkle shredded cheese on top.
  5. Bake for 25-30 minutes until cheese is bubbly and golden brown. Let rest for 10 minutes before serving.
