  • 2 tbsp olive oil
  • 1 cup sharp cheddar cheese, grated
  • 1 cup panko breadcrumbs
  • 1 tsp dried thyme (or Italian seasoning)
  • 1 cup vegetable broth
  • ½ cup sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Chop the mixed vegetables into bite-sized pieces.
  3. In a large skillet, heat olive oil over medium heat. Sauté chopped vegetables for about 5–7 minutes until slightly softened.
  4. In a mixing bowl, combine sautéed vegetables with sour cream, half of the cheese, thyme, salt, and pepper. Stir well.
  5. Transfer the mixture to a greased baking dish and spread it evenly.
  6. Top with remaining cheese and panko breadcrumbs.
