  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 medium yellow onion, chopped
  • 2 cups low-sodium vegetable broth
  • 1/4 tsp ground nutmeg
  • 8 oz pasta of your choice (e.g., fusilli)

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop out the seeds. Drizzle each half with olive oil and sprinkle with salt. Place cut-side down on a lined baking sheet.
  2. Roast in the oven for 40-50 minutes until fork-tender and caramelized.
  3. While the squash roasts, heat olive oil in a large pan over medium heat. Sauté chopped onions until translucent (about 5 minutes) and then add minced garlic; stir until fragrant.
  4. Once roasted squash is cool enough to handle, scoop out the flesh into a blender or food processor. Add sautéed onions, garlic, vegetable broth, nutmeg, and blend until smooth.
  5. Cook pasta according to package instructions; drain and toss with the butternut squash sauce until evenly coated. Serve immediately.
