  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Cooking spray or 2 tsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut chicken breasts into strips about one inch wide for even cooking.
  3. In one bowl, combine flour, garlic powder, paprika, salt, and pepper. In another bowl, beat the eggs until frothy. Place panko breadcrumbs in a third bowl.
  4. Dredge each chicken strip in the flour mixture, dip in egg wash, then coat with panko breadcrumbs.
