Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with foil.
  2. Wash and dry the russet potatoes, then bake directly on the oven rack or prepared sheet for about 45 minutes until fork-tender.
  3. Let the potatoes cool for 10-15 minutes; then cut in half lengthwise and scoop out some flesh, leaving a ¼ inch border.
