  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 small onion, finely chopped
  • 1 cup fresh breadcrumbs
  • 2 large eggs
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste
  • Oil for frying (vegetable or canola)

Instructions

  1. Cook the chicken breasts in salted water until fully cooked (15-20 minutes). Shred into bite-sized pieces.
  2. In a skillet, heat oil over medium heat and sauté the onions and garlic until fragrant (about 5 minutes).
  3. In a bowl, combine shredded chicken, sautéed onions and garlic, breadcrumbs, eggs, parsley, salt, and pepper. Mix until well combined.
  4. With wet hands, form the mixture into oval balls or patties (1-2 inches in size).
  5. Heat oil in a deep skillet over medium-high heat. Fry the croquettes in batches until golden brown on all sides (3-4 minutes per side).
  6. Drain on paper towels and serve hot with your favorite dipping sauce.
