  • 4 medium Russet potatoes (about 1.5 lbs)
  • 4 cups vegetable oil (for frying)
  • 1 tsp sea salt (adjust to taste)
  • 1 tsp paprika (optional)

Instructions

  1. Wash and peel the Russet potatoes, then cut them into ¼ inch thick strips.
  2. Soak potato strips in cold water for at least 30 minutes to remove excess starch.
  3. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  4. Fry half of the soaked potatoes for about 5-6 minutes until pale but cooked; remove and let cool briefly.
  5. Return cooled fries to the hot oil for another 3-4 minutes until golden brown and crispy.
  6. Drain on paper towels and sprinkle with salt (and paprika if desired) immediately.
