Instructions

  1. Preheat oven to 325°F (160°C). Place ramekins in a baking dish.
  2. Heat heavy cream and vanilla in a saucepan until steaming.
  3. Whisk together egg yolks, sugar, and salt until pale.
  4. Gradually combine warm cream with egg mixture while whisking.
  5. Pour custard into ramekins and fill with hot water halfway up the sides.
  6. Bake for 30-35 minutes until set but slightly jiggly.
  7. Chill in the refrigerator for at least 2 hours.
  8. Sprinkle sugar on top of custards and caramelize using a kitchen torch or broiler.
