  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 8 oz fresh cremini or button mushrooms, sliced
  • 3/4 cup sweet Marsala wine
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prep your ingredients by slicing the mushrooms and mincing the garlic.
  2. Heat butter and olive oil in a large skillet over medium-high heat. Sear seasoned chicken breasts for about 5 minutes on each side until golden brown. Remove from the pan.
  3. In the same skillet, add minced garlic and sliced mushrooms. Sauté until mushrooms are browned, about 5 minutes.
  4. Pour in the Marsala wine to deglaze the pan, scraping up any bits stuck to the bottom; simmer for 2-3 minutes.
  5. Add chicken broth back into the skillet and return the chicken. Simmer together for about 10 minutes until sauce thickens slightly.
  6. Sprinkle with chopped parsley before serving over pasta or mashed potatoes.
