Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts (about 34 breasts)
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup broccoli florets
  • 1 cup carrots, julienned
  • 3 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp cornstarch mixed with 2 Tbsp cold water
  • 2 green onions, chopped
  • Cooked rice or noodles for serving

Instructions

  1. Prepare your ingredients by washing and chopping all veggies into bite-sized pieces and slicing the chicken into thin strips.
  2. In a small bowl, whisk together soy sauce, sesame oil, cornstarch with cold water, and minced garlic; set aside.
  3. Heat a splash of oil in a large skillet or wok over medium-high heat. Add chicken strips and cook until golden brown and cooked through (about 5-7 minutes).
  4. Toss in bell peppers, broccoli florets, and carrots. Stir-fry for about 3-4 minutes until veggies are tender-crisp.
  5. Pour the prepared sauce over the chicken and vegetables. Stir constantly until everything is well-coated and glossy (about 1-2 minutes).
  6. Serve immediately over cooked rice or noodles, garnished with chopped green onions.
