  • Zest and juice of 1 orange

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. In another bowl, mix milk, eggs, melted butter, orange zest, and juice until frothy.
  4. Combine wet ingredients into dry ingredients; stir gently until just mixed.
  5. Fold in cranberries carefully.
  6. Fill muffin cups three-quarters full and bake for 18-20 minutes or until golden brown.
  7. Cool for 5 minutes in the tin before transferring to a wire rack.
