  • 1 medium onion, finely chopped
  • 1 green bell pepper, diced
  • 1 stalk celery, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tsp paprika
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

  2. Push the vegetables to one side and add ground beef. Cook until browned (7-8 minutes), breaking it apart with a spatula.

  4. Add the rice and chicken broth; stir thoroughly and bring to a gentle boil.
  5. Reduce heat to low, cover tightly, and simmer for about 20 minutes until the rice is cooked.
