  • 1 medium onion, finely chopped
  • ½ cup ketchup (plus extra for topping)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs (optional)
  • ½ cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line with paper liners.
  2. In a skillet over medium heat, sauté the chopped onion until translucent (about 5 minutes).
  3. In a large bowl, mix the ground beef, sautéed onions, breadcrumbs, eggs, ketchup, salt, pepper, garlic powder, and herbs until combined—do not overmix.
  4. Spoon the mixture into the muffin tin, filling each cup about three-quarters full.
  5. Top each muffin with a drizzle of ketchup for added flavor.
  6. Bake for 20-25 minutes until golden brown and an internal temperature of 160°F (70°C) is reached.
  7. Allow to cool slightly before removing from the tin.
