  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp taco seasoning
  • 2 cups shredded lettuce
  • ¼ cup sour cream or Greek yogurt

Instructions

  1. In a large skillet over medium heat, cook the ground turkey or chicken until fully cooked (7-10 minutes), breaking it apart as it cooks.
  2. Add taco seasoning to the meat; stir well and add a splash of water if needed.
  3. Toss in chopped bell peppers and sauté for an additional 5 minutes until slightly softened.
  4. Prepare serving bowls with a base layer of shredded lettuce.
  5. Spoon in the meat mixture followed by black beans, cherry tomatoes, diced avocado, and top with sour cream or Greek yogurt.
  6. Garnish with cheese and cilantro if desired; serve immediately.
