  • 2 salmon fillets (6 oz each)
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste
  • 2 tbsp butter
  • ¼ cup dry white wine
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. Pat salmon fillets dry and season with salt and pepper.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 30 seconds). Add cherry tomatoes and cook until softened.
  4. Push tomatoes aside and place salmon skin-side down in the skillet. Cook for 4-5 minutes until golden brown.
  5. Pour in white wine; simmer for a minute before adding butter, lemon juice, and basil. Stir to combine.
  6. Transfer skillet to oven or place salmon on the prepared baking sheet. Bake for 10-12 minutes until salmon flakes easily with a fork.
