Zoodles, or zucchini noodles, are a light and refreshing alternative to traditional pasta. This vibrant dish features spiralized zucchini sautéed with garlic, juicy cherry tomatoes, and fresh basil. Perfect for a quick weeknight dinner, zoodles deliver a burst of flavor in every bite while being low in carbs.

  • 2 medium zucchinis (spiralized)
  • 1 cup cherry tomatoes (halved)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • 1/4 cup fresh basil leaves (torn)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchinis into noodle-like strands and pat dry.
  2. Heat olive oil in a large pan over medium heat. Add minced garlic and halved cherry tomatoes; sauté until fragrant and soft (3-4 minutes).
  3. Add the zoodles to the pan, stirring gently for an additional 2-3 minutes until tender but still al dente.
  4. Season with salt and pepper; add torn basil leaves and stir well.
  5. Remove from heat, top with grated Parmesan cheese, and serve immediately.
