  • 1 cup granulated sugar
  • ½ cup vegetable oil or unsweetened applesauce

  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×4 inch loaf pan.
  2. Grate zucchinis and set aside to drain excess moisture.
  3. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  4. In another bowl, beat eggs, sugar, oil (or applesauce), and vanilla until smooth.
  5. Gradually fold dry ingredients into the wet mixture, then gently mix in the grated zucchini.
