Vietnamese Pho is a fragrant, comforting noodle soup that transports you straight to the bustling streets of Ho Chi Minh City. This recipe brings together soft rice noodles, tender beef brisket, and an aromatic broth seasoned with fresh herbs and zesty lime.   • 8 oz flat rice noodles
  • 1 lb beef brisket (or chicken)
  • 1 cup fresh basil leaves
  • 1 cup fresh cilantro leaves
  • 1 cup fresh mint leaves
  • Juice of 2 limes
  • 3 tbsp high-quality fish sauce
  • 1 onion, halved and charred
  • 2 star anise pods
  • 1 cinnamon stick
  • 2 slices ginger root

Instructions

  1. In a large pot, combine 8 cups water, charred onion halves, ginger slices, star anise, cinnamon stick, and beef brisket. Bring to a gentle boil.
  2. After boiling for about 10 minutes, stir in fish sauce.
  3. Reduce heat and simmer for 1.5 hours to meld flavors.
  4. Prepare rice noodles as per package instructions; rinse under cold water.
  5. Strain the broth into another pot and adjust seasoning with salt or more fish sauce if needed.
  6. To serve, place cooked noodles in bowls, pour hot broth over them, and top with sliced brisket, fresh herbs, bean sprouts, and lime wedges.
