  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup bell peppers, diced (any color)
  • 1 cup salsa (medium heat)
  • 1 ½ cups shredded cheese (cheddar and Monterey Jack mix)
  • 1 tsp ground cumin
  • 2 tbsp olive oil
  • 2 cups chicken broth

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish.
  2. In a skillet over medium heat, add olive oil and sauté diced bell peppers until tender (about 5 minutes).
  3. Stir in rinsed rice and chicken broth; bring to a gentle boil while stirring occasionally.
  4. In a large bowl, mix black beans, salsa, cumin, and the rice mixture until combined.
  5. Layer half of the mixture in the baking dish, sprinkle half of the cheese on top. Repeat with remaining mixture and cheese.
  6. Bake for 25-30 minutes until golden brown on top.
