  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups vegetable broth (or water)
  • 1 cup fresh spinach
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • ½ cup grated Parmesan cheese
  • Salt & pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté minced garlic until fragrant (about 30 seconds).
  2. Add uncooked penne pasta, canned diced tomatoes (with juices), salt, pepper, and enough vegetable broth to cover by about an inch.
  3. Bring to a gentle boil; reduce heat and simmer, stirring occasionally until pasta is al dente (approximately 10-15 minutes).
  4. In the last few minutes of cooking, add spinach, bell pepper, and zucchini; stir until veggies are slightly wilted.
  5. Remove from heat and stir in Parmesan cheese until melted. Serve warm.
