  • 1 lb lean ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 cups fresh spinach or kale
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Dice sweet potatoes into bite-sized cubes.
  2. In a large skillet over medium heat, add olive oil. Sauté onions until translucent, then add garlic and cook until fragrant.
  3. Add ground turkey to the skillet, breaking it apart as it cooks for about 5-7 minutes until browned.
  4. Stir in bell peppers and leafy greens, cooking until soft.
  5. Spread diced sweet potatoes on a baking sheet, season with salt and pepper, and roast for 25-30 minutes until golden.
