1 cup ditalini pasta
1 medium carrot, finely chopped
1 stalk celery, finely diced
1 medium yellow onion, diced
3 cloves garlic, minced
4 cups low-sodium vegetable broth
2 tbsp extra virgin olive oil
1 tsp dried oregano
¼ cup freshly grated Parmesan cheese

Instructions
In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté for about 5 minutes until softened.
