  • 1 cup dried pinto beans
  • 2 tablespoons olive oil or lard
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 4 cups low-sodium chicken or vegetable broth
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Rinse the pinto beans under cold water and soak them overnight in plenty of water.
  2. Drain the soaked beans and cook them in a pot with 4 cups of fresh broth over medium heat until tender (about 1 to 1.5 hours), stirring occasionally.
  3. In a skillet, heat olive oil or lard over medium heat. Sauté the onion until translucent (about 5 minutes), then add minced garlic and cook for an additional minute.
  4. Stir in cumin, salt, and pepper to the onion mixture.
  5. Mash the cooked beans into the skillet with the sautéed aromatics until creamy but still slightly chunky (3-5 minutes).
  6. Add lime juice and adjust consistency with remaining broth if needed.
