  • 2 large eggs

  • 2 cups diced apples (Granny Smith or Honeycrisp)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, lightly beat the eggs and mix in the oil until combined.
  4. Fold the wet ingredients into the dry mixture until just combined. Gently fold in the diced apples and nuts if using.
  5. Pour the batter into the prepared loaf pan and bake for 60 minutes or until golden brown and a toothpick comes out clean.
  6. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
