Ingredients

Scale
  • 1 cup unsweetened applesauce
  • 1 cup granulated sugar
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup vegetable oil (or melted butter)
  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, combine granulated sugar and vegetable oil until blended. Add eggs one at a time, mixing well after each addition. Stir in applesauce and vanilla extract.
  3. In another bowl, sift together flour, baking powder, cinnamon, nutmeg, and salt. Gradually fold dry ingredients into wet ingredients until just combined—do not overmix.
  4. Pour batter into prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
