  • 1 lb lean ground beef
  • 4 large flour tortillas
  • 1 cup shredded sharp cheddar cheese
  • 1 cup fresh salsa (mild or spicy)
  • 1 can (15 oz) black beans, rinsed
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 tsp olive oil
  • 2 tsp cumin
  • 2 tsp chili powder

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onions and bell peppers until softened.
  2. Add ground beef to the skillet and brown it for about 5–7 minutes. Break up clumps while cooking.
  3. Stir in cumin and chili powder; cook for an additional minute until fragrant.
  4. Add rinsed black beans and salsa to the mixture. Cook for another 3–4 minutes until heated through.
  5. Lay tortillas flat, spoon filling onto each one, top with cheddar cheese, and roll tightly.
  6. Place seam-side down in the skillet; cook on medium heat for 2–3 minutes per side until golden.
