  • 1 cup short-grain rice
  • 1 medium carrot, julienned
  • 1 cup spinach
  • 1 cup mushrooms, sliced
  • 1 medium zucchini, julienned
  • ½ lb beef bulgogi (or tofu for vegetarian option)
  • 3 tbsp gochujang sauce
  • 1 tbsp sesame oil
  • 2 eggs

Instructions

  1. Rinse rice under cold water until clear, then cook according to package instructions (about 20 minutes) until fluffy.
  2. Prep vegetables by washing and slicing them into thin strips.
  3. In a skillet over medium heat, add sesame oil and sauté each vegetable separately for about 3-4 minutes until tender.
  4. If using beef bulgogi, marinate slices in soy sauce and garlic while cooking veggies. Sear in the same skillet for about 5-7 minutes until browned.
  5. In another pan, fry eggs sunny-side-up until edges are crispy and yolks are runny (about 3 minutes).
  6. Assemble: Layer rice in a bowl, top with sautéed vegetables and protein. Finish with the fried egg and drizzle with gochujang sauce.
