  • 2 lbs chuck roast
  • 4 dried guajillo peppers, soaked
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 cup fresh cilantro, chopped (for garnish)
  • 1 lime, juiced
  • 8 corn tortillas
  • 4 cups beef broth
  • 2 tsp cumin powder
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cut the chuck roast into large chunks and season generously with salt and pepper.
  2. Blend soaked guajillo peppers, onion, garlic, cumin powder, oregano, salt, and pepper until smooth.
  3. Heat oil in a large pot over medium heat and sear the beef chunks until browned on all sides.
  4. Pour in the blended spice mixture and beef broth. Bring to a gentle boil, then reduce heat. Cover and simmer for about 3 hours or until meat is fork-tender.
  5. Shred the beef in the pot to mix with the sauce.
  6. Warm corn tortillas in a skillet. Dip briefly into consomé before filling with shredded beef.
  7. Serve with small bowls of consomé for dipping; garnish with chopped cilantro and lime wedges.
