  • 1 large Vidalia or sweet onion
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper (adjust to taste)
  • 1 cup buttermilk
  • Oil for frying (enough to submerge the onion)
  • 1/2 cup ketchup
  • 2 tbsp horseradish sauce (adjust to spice preference)
  • 1 tbsp fresh lemon juice

Instructions

  1. Carefully peel the onion and cut off the top while keeping the root intact.
  2. Place the onion cut-side down and slice downward every 1/4 inch without cutting through the root.
  3. In one bowl, whisk together buttermilk and spices. In another bowl, mix flour, cornmeal, and remaining spices.
  4. Dip the onion in the buttermilk mixture, ensuring it's fully submerged. Coat it with the flour mixture, covering each petal.
  5. Heat oil in a deep pot to 375°F (190°C). Fry the coated onion for 3-5 minutes until golden brown and crispy.
  6. For the dipping sauce, mix ketchup, horseradish sauce, and lemon juice until smooth.
