  • 5 oz Boursin cheese (any herb variety)
  • 2 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • ¼ cup toasted pine nuts (optional)

Instructions

  1. Cook the penne pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute). Stir in the baby spinach and cook until wilted.
  3. Reduce heat to low and add Boursin cheese to the skillet. Stir until melted and well combined with the spinach and garlic.
  4. Toss in the cooked pasta and halved cherry tomatoes, mixing until everything is coated in the creamy sauce. Add reserved pasta water as needed for desired consistency.
  5. If using, toast pine nuts in a separate pan until golden brown and sprinkle over the pasta before serving.
