  • 1-inch ginger root, grated
  • 28 oz canned tomatoes (whole or crushed)
  • 1 cup full-fat coconut milk
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp garam masala
  • Fresh cilantro for garnish

Instructions

  1. Trim excess fat from chicken thighs and cut into bite-sized pieces.
  2. In a skillet over medium heat, sauté diced onions until golden brown. Add minced garlic and grated ginger; cook until fragrant.
  3. In a crockpot, combine canned tomatoes, coconut milk, cumin, coriander, garam masala, and sautéed aromatics. Stir to blend.
  4. Fold in chicken pieces until well-coated with sauce.
