  • 100g freshly grated Pecorino Romano cheese
  • 2 tsp freshly cracked black pepper

Instructions

  1. Prepare all ingredients and equipment including a large pot for boiling spaghetti.
  2. Bring salted water to a boil in the pot. Cook the spaghetti until al dente (about 8-10 minutes), then reserve 1 cup of pasta water before draining.
  3. In a mixing bowl, combine grated Pecorino Romano cheese and cracked black pepper. Gradually mix in reserved pasta water until creamy.
  4. Return drained pasta to the pot over low heat, adding the cheese mixture. Toss vigorously until well coated.
  5. Serve immediately, garnished with extra cheese and cracked pepper.
