  • 1/4 cup white vinegar
  • 1 tsp salt (adjust to taste)
  • 1/4 tsp rennet (or as per package instructions)
  • 2 tbsp butter (optional)

Instructions

  1. Pour the whole milk into a large pot over medium heat. Stir gently until it reaches about 190°F (88°C), just before boiling.
  2. Remove from heat, stir in white vinegar, then add rennet according to package instructions. Let sit undisturbed for 5-10 minutes until curds form.
  3. Use a long knife to cut the solid curds into small squares to release whey effectively.
  4. Return the pot to low heat, stirring occasionally until curds firm up (about 5-10 minutes).
  5. Pour through a colander lined with cheesecloth to separate whey from curds; rinse briefly under cold water.
  6. Mix in salt while warm for maximum flavor absorption. Enjoy immediately or store in an airtight container in the fridge for up to one week.
