1/4 cup white vinegar
1 tsp salt (adjust to taste)
2 tbsp unsalted butter (optional)
Instructions
Pour the whole milk into a large pot over medium heat. Stir gently until the temperature reaches 190°F (88°C) without boiling.
Remove from heat and stir in the white vinegar. Let sit for 5 minutes for curds to form.
Strain the mixture through a fine-mesh strainer lined with cheesecloth to separate the curds from the whey. Rinse under cold water.
Transfer drained curds to a bowl, sprinkle with salt, and gently mix.
