  • 1 gallon whole milk
  • 1/4 cup white vinegar
  • 1 tsp salt (adjust to taste)
  • 2 tbsp unsalted butter (optional)

Instructions

  1. Pour the whole milk into a large pot over medium heat. Stir gently until the temperature reaches 190°F (88°C) without boiling.
  2. Remove from heat and stir in the white vinegar. Let sit for 5 minutes for curds to form.
  3. Strain the mixture through a fine-mesh strainer lined with cheesecloth to separate the curds from the whey. Rinse under cold water.
  4. Transfer drained curds to a bowl, sprinkle with salt, and gently mix.
  5. Shape into molds if desired, or enjoy immediately for optimal freshness.
