Ingredients

Scale
  • 1 cup long-grain rice
  • 2 cups water
  • 2 cups fresh broccoli florets
  • 2 tablespoons unsalted butter
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup whole milk
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the rice until the water runs clear. In a pot, combine the rice and water; bring to a boil. Cover and simmer for about 18 minutes until tender.
  2. While the rice cooks, chop broccoli into small florets. In a skillet over medium heat, melt butter and sauté broccoli for about 5 minutes until bright green and tender-crisp.
  3. In a bowl, mix cheddar cheese, milk, garlic powder, salt, and pepper until smooth.
  4. Once the rice is cooked, combine it with sautéed broccoli in the skillet. Pour the cheese sauce over and stir until well-coated.
  5. Optional: Preheat oven to 350°F (175°C). Transfer to an oven-safe dish, top with extra cheese if desired, and bake for 15-20 minutes until bubbly.
