  • 1 cup bell peppers, diced (mixed colors)
  • 1/2 cup onion, diced
  • 1 cup chicken broth

  1. Cook the elbow macaroni in salted boiling water until al dente; drain and set aside, reserving some pasta water.
  2. In a large skillet over medium heat, sauté ground beef or turkey with diced onions and bell peppers until meat is browned and veggies are tender (about 5-7 minutes).

  4. Add cream cheese and chicken broth to the skillet, stirring until smooth.
  5. Combine cooked pasta with the meat mixture, adding shredded cheese until melted. Adjust consistency with reserved pasta water if needed.
