Chicken Biryani is a fragrant and flavorful dish that combines tender marinated chicken, aromatic spices, and fluffy basmati rice.   • 1 lb boneless chicken thighs
  • 2 cups basmati rice, rinsed
  • 2 medium onions, thinly sliced
  • 2 tbsp garlic-ginger paste
  • 1 cup plain yogurt
  • 1/2 cup fresh mint, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 4 green cardamom pods
  • 1 cinnamon stick
  • A pinch of saffron threads soaked in warm water
  • Salt to taste

Instructions

  1. Marinate chicken thighs with yogurt, garlic-ginger paste, cumin, coriander, and salt for at least 30 minutes.
  2. In a large pot over medium heat, sauté sliced onions until golden brown.
  3. Add whole spices (cardamom and cinnamon) followed by the marinated chicken. Cook until browned and fragrant (about 5–7 minutes).
  4. Gently fold in the rinsed basmati rice and add water or chicken broth along with saffron-infused water. Bring to a boil, then reduce heat to simmer.
  5. Layer chopped mint and cilantro on top before covering the pot with a lid. Cook on low heat until rice is fluffy (20–25 minutes).
  6. Turn off the heat and let it rest for 10 minutes before fluffing with a fork.
