  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic
  • 1 medium onion
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 10 empanada dough discs (store-bought)
  • 1 egg + 1 tbsp water (for egg wash)

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté chopped onions and minced garlic until translucent.
  2. Add diced chicken, cumin, and paprika; cook until chicken is thoroughly cooked.
  3. Let the filling cool slightly. Spoon it into the center of each dough disc.
  4. Fold each disc in half, pressing edges firmly with fingers or a fork to seal.
  5. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and brush each empanada with egg wash.
  6. Bake for 25-30 minutes or until golden brown.
