  • 2 medium bell peppers (1 red, 1 green)
  • 1 large onion
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning
  • 4 tortillas (flour or corn)
  • Juice of 1 lime
  • Fresh cilantro (optional)

Instructions

  1. Slice chicken into thin strips against the grain.
  2. In a bowl, mix chicken with olive oil, lime juice, and fajita seasoning. Marinate for at least 30 minutes.
  3. Preheat a large cast-iron skillet over medium-high heat until hot.
  4. Add marinated chicken to the skillet in a single layer. Cook until golden brown on all sides (5-7 minutes). Remove from skillet.
  5. In the same skillet, add sliced onions and bell peppers; sauté until softened and slightly charred (about 5 minutes).
  6. Return the cooked chicken to the skillet and toss everything together for another minute.
  7. Serve warm on tortillas topped with fresh cilantro if desired.
