  • 2 lbs boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 3 chipotle peppers in adobo sauce (adjust to taste)
  • 1 cup canned tomato sauce
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 8 small corn or flour tortillas

Instructions

  1. Boil chicken breasts in a pot of water over medium heat for about 20 minutes until cooked through.
  2. In a skillet, heat oil over medium heat; sauté onions and garlic until fragrant.
