  • 1 ½ cups grated zucchini (about 12 medium zucchinis)
  • ½ cup vegetable oil (or melted coconut oil)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, granulated sugar, and brown sugar until well combined.
  3. In another bowl, beat eggs with vanilla extract and oil. Stir in the grated zucchini until well mixed.
  4. Gently fold the wet mixture into the dry ingredients until just combined; do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool slightly before slicing.
