  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup unsalted butter (softened)
  • 1 cup chocolate chips (semi-sweet or dark)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined. Fold in chocolate chips.
  4. For the crumble topping, combine flour with brown sugar and cold butter in a separate bowl until crumbly.
  5. Spread half of the cookie batter in the baking dish, sprinkle half of the crumble on top, then dollop remaining batter over it. Finish with the rest of the crumble.
  6. Bake for 30-35 minutes until golden brown around the edges. Allow to cool slightly before serving.
